The cabbage salad with speck, in the original Krautsalat mit Speck, is a typical Tyrolean side dish, but is often also served at the beginning of a meal. In the province of Bolzano it is almost impossible not to find it on the table to accompany local specialties, from dumplings to goulash.

Its taste is particularly greedy and aromatic: all thanks to Speck Alto Adige PGI, which for the occasion becomes crunchy and conquers even those who are not fond of salads or cabbage. Because sometimes very few ingredients, the right ones, are enough to cook genuine and extremely good dishes.

The recipe is easy and is prepared very quickly, but it is recommended to leave it to flavor for a few hours. You can also prepare it in advance and let it rest overnight. This will make the cabbage softer and better absorb the flavor of the seasoning.

Ingredients for 4 people

400 g white cabbage
3 tablespoons of white wine vinegar
4 tablespoons delicate extra virgin olive oil
White pepper
100 g Speck Alto Adige PGI
salt
cumin

Preparation

To prepare the Tyrolean speck salad, start by cleaning the cabbage: remove the outer leaves of the cabbage, cut it into four wedges and remove the central core. Cut the cabbage very finely, with a knife or with the help of a kitchen mixer (in this way, you will do it in no time!).

Meanwhile, heat the white wine vinegar and extra virgin olive oil, flavored with white pepper and cumin and season the cabbage. Season with salt.

Cut the speck into thin strips. Be careful, absolutely do not remove the fat, it will be he who will make the salad super tasty.
Brown the speck in a non-stick pan, without adding oil or other fats, stirring occasionally. You will see that the fat will begin to melt slightly: when the speck has taken on an almost golden color and a crunchy consistency, turn off the heat and add the strips to the white cabbage. The Tyrolean speck salad is ready!
