Ingredients
- 700 g turkey breast
- 400 g green beans
- 6 pcs egg yolks
- 2 pcs shallots
- lemon
- flour
- vegetable broth
- dry white wine
For the recipe of turkey fricassee with green beans, clean the turkey, removing the fat and the ribs, cut it into 2-3 cm morsels and flour them. Peel the beans, cook them in salted boiling water for 5 minutes, drain them, cool them in water and ice and season with oil and salt. Beat the egg yolks with the juice of half a lemon, a nice pinch of salt and pepper. Peel the shallots, slice them and fry them in a saucepan with 2 tablespoons of oil for a couple of minutes; add the floured turkey bites, sprinkle with half a glass of wine, cook for 1-2 minutes, then add 2 glasses of broth, lower the heat and cook for 6-7 minutes in a covered casserole; remove the lid and continue for another 5-6 minutes until the liquid has dried. Remove the pan from the heat and add the beaten egg yolks immediately, stirring well. Serve the turkey fricassee with green beans.
