Undecided among which cereals to use, we suggest you make a rich mix of cereals.
Spelled, rice, wheat, barley they have more or less all the same cooking times and create a nice contrast of flavors and textures.
For example, barley is softer, more crispy spelled, more floury rice and more meaty and tasty wheat.

That's why we suggest you to play a lot with herbs which not only give a lot of flavor, but allow you to use less seasonings to obtain a light dish.
A perfect mix, very fresh and summery, provides mint, basil, parsley and wanting too fresh oregano and marjoram.
You can also add some grated lemon zest and chopped dried tomatoes to give it a little more flavor.

The recipe of the cereal salad with aromatic herbs

First wash the cereals very well and then cook them in boiling salted water for about 15 minutes, or for the time indicated on the package.
Drain them and cool them immediately with cold water to stop cooking.
Chop a mix of fresh herbs with a knife and mix them with a cup of oil and lemon juice.
Season the cereals and then add other ingredients to taste.
This salad should be served cold, can be prepared in advance and remains very good up to three days stored in the refrigerator.
