First of all prepare a lievitino: crumble the yeast in a small bowl, add 1 teaspoon of sugar and melt them with the milk, just warmed up.
Add 50 g of sifted flour, mix, cover with plastic wrap and let rise in the oven turned off for at least 30 minutes.

Pour 1 egg and 1 egg yolk, honey, yogurt and salt in a bowl and beat with a whisk for 5 minutes.
Add the remaining flour, after having sieved it, the chopped soft butter and the lievitino.
Work for at least 10 minutes: you will need to obtain a smooth and elastic dough.

Cover the bowl with plastic wrap and let it rise for at least 2 hours.

Take the dough again, deflate it with your hands on the lightly floured work surface and divide into three blocks.
Cut 3 small slices and twist them together to make a braid.

Gently transfer the braid onto a baking sheet lined with parchment paper and let it rise in the oven for at least 30 minutes.
Then lightly brush with the remaining egg white, sprinkle with almonds and sugar and cook in a convection oven preheated to 200 ° C for 10 minutes.
Then lower the temperature to 180 ° C and cook for another 30 minutes.

The sweet yoghurt braid is ready, let it cool completely before cutting it and eating it.
