Work the flour with the egg and milk until a smooth and elastic dough is obtained; at the end incorporate the raisins, drained, slightly squeezed and floured. Cover the dough with a damp cloth and let it rise at 30 ° C for 30 '.
Then spread it in a buttered pan (27 × 38 cm) and brush it with 5 tablespoons of water mixed with 20 g of sugar and 12 g of lemon juice. Let rise for another 30 '. Finally, sprinkle with raw sugar and bake at 210 ° C for about 20-25 ′. It is also delicious with jam.
