For the recipe of the cut in white sauce, mix 2 tablespoons of sugar and 1 tablespoon of salt, rosemary and sage chopped by hand. Sprinkle the meat with this mixture and leave it covered in the fridge for 12 hours.
Finally rinse it and dry it by dabbing it with kitchen paper. Put it on the grill where the heat is very strong and brown it well on both sides for a couple of minutes. Move it to a more moderate heat zone and cook for 15-20 minutes. Cut the zucchini into small pieces and place them on a flame spreader, over the grill. Finally, sprinkle them with a little lemon juice. Serve the sliced meat with the courgettes seasoned with a little oil and a few basil leaves.
