The perfect mushrooms for this recipe are mushrooms that are suitable for filling like champignons. Well brushed and without the stem, they are perfect for filling. But be careful: it is strictly forbidden to throw away the stems!

The perfect filling to transform simple champignons into a tasty dish, we will prepare it with mushroom stalks, shelled sausage, chopped parsley and garlic, a pinch of salt and a little grated bread. To make them even tastier, add some grated cheese such as pecorino or provola. Avoid mozzarella because its water would not allow the mushrooms to braise.
