Sardinian recipe in saor and strawberries


  • 600 g sardines
  • 400 g red onions
  • 100 g flour
  • 80 g red wine vinegar
  • 50 g pine nuts
  • 40 g cane sugar
  • 40 g raisins
  • 6 pcs strawberries
  • mint
  • peanut oil
  • extra virgin olive oil
  • salt

For the recipe of sardines in saor and strawberries, chop the red onion into thin sticks (the weight must be equivalent to that of clean sardines); brown in a pan with a drizzle of extra virgin olive oil; after 5 minutes add the vinegar and let it dry; finally add the sugar and 1/2 glass of water and cook over high heat for another 15 minutes. Soak the raisins in warm water for about ten minutes. Toast the pine nuts in a pan over low heat for 3 minutes and add them to the onions together with the well-wrung raisins. Clean the sardines: remove the heads, gut them and rinse them under running water. Heat 1 liter of peanut oil in a large skillet with high sides. Meanwhile mix the flour in a bowl with a pinch of salt and flour the sardines, shaking off the excess flour. Fry a few sardines at a time in very hot oil (160-170 ° C). Drain after 2-3 minutes on a tray covered with kitchen paper. Place a layer of onions in a baking dish, then one of sardines and proceed alternating the layers until the ingredients are exhausted. Cover with plastic wrap and refrigerate for at least one night. Serve the sardines at room temperature completing them at the last moment with the sliced ​​strawberries and a few mint leaves.
