Preparation of the sandwich with mozzarella and vegetables
1) Cut the bread halfway lengthwise, remove the breadcrumbs and put it under the oven grill for a few minutes; keep it aside.
2) Wash and dry zucchini, mushrooms, tomatoes and parsley. Blend the parsley with 1 peeled garlic clove and 5 tablespoons of oil; salted. Slice the courgettes into a ribbon, cook them on a hot grill and season with a drizzle of parsley oil.
3) Slice i mushrooms and sauté them in the pan with the remaining peeled and crushed garlic, 2 tablespoons of oil and a few sprigs of thyme; salt and pepper at the end of cooking. Dice i tomatoessalt them, season them with washed and chopped basil.
