Add the egg, basil and olives to the rice salad and mix.
With wet hands, form meatballs and pass them in breadcrumbs.
Heat the oil (you can use the one of seeds or olive, as you prefer) in a pan and fry the croquettes, turning them to make them brown evenly.
Once well browned, drain on kitchen paper.
The rice salad croquettes are ready, serve them immediately!
