Recipe Vegetable soup with bruschetta


  • 1 L Vegetable broth
  • 80 g bunch of herbs (beets)
  • 16 Slices of homemade bread
  • 1 clove of garlic
  • Fresh pecorino
  • Extra virgin olive oil
  • salt

Heat the vegetable broth well. Rub the slices of homemade bread with a clove of peeled garlic and deprived of any sprout, grease them with oil, then put them in the oven to toast (bruschetta), after placing them on a plate covered with baking paper.

Wash and chop the herbs and distribute them fresh in the serving bowls together with the bruschetta and the coarse grated pecorino; pour over all the boiling vegetable broth and serve: the heat of the broth will make the herbs "wilt".
