Ingredients
- 650 g a slice of salmon with skin
- 100 g peeled almonds
- a pink grapefruit

For the salmon steak recipe with citrus and almond mayonnaise, place the almonds in a bowl and cover them with water. Leave them to soak for 4 hours. Then blend the almonds and the soaking water in the mixer; pass them through a sieve, crushing them well, to get the milk.
Add salt and pepper and blend the milk adding about 100 g of seed oil. Complete the mayonnaise with the juice of a lemon. Trim the salmon slice and place it with the skin facing down in a plate covered with baking paper, lightly greased with extra virgin olive oil. Season the pulp with a drizzle of extra virgin olive oil and a little grated orange, grapefruit and lime peel; bake at 180 ° C for 10-15 minutes, depending on the thickness of the slice.
In the meantime, peel the citrus fruits in vivo, obtaining the segments; shell the pomegranate. Serve the salmon with mayonnaise, citrus fruit wedges, pomegranate, toasted almond flakes and mint leaves.
