Recipe Manfricoli, the traditional Narni pasta


Manfricoli are a typical Narni pasta, try them for a taste of authentic Umbrian cuisine

  • 500 g flour 0
  • 1 egg white
  • fresh tomato sauce
  • salt

To prepare the manfricoli, add 500 g of 0 flour, a pinch of salt and 1 egg white mixed with warm water. Hand-pick the flour from the fountain by hand, making sure that the dough becomes firm but not hard.
Roll out balls in 30-40 cm long rolls. Dust them with flour, let them rest for a few minutes and then cook them in abundant salted water. As soon as they come to the surface, drain and season with fresh tomato sauce.
