Recipe Chicken and spelled soup


  • a chicken
  • 300 g dry peas
  • 250 g spelled ham (to be softened)
  • odors (celery, carrot, onion, laurel)
  • parsley
  • tomato concentrate
  • extra virgin olive oil
  • salt
  • pepper in grains

To prepare the chicken and spelled soup boil the chicken for 60 'in 3 liters of water flavored with herbs, salt and some peppercorns. Strain, measure 2 and a half liters of the obtained broth, bring it to a boil, add the dried peas, the spelled chop already soaked for an hour, a teaspoon of concentrate and, over low heat, cook the whole for about 50 ′; at the end, garnish the soup with the boiled, pulped chicken, reduced to strips, chopped parsley, salt, ground pepper, a drizzle of raw oil and serve hot.
