Recipe Cat tongues and mango ice cream


  • 400 g mango pulp
  • 200 g milk
  • 100 g fresh cream
  • 80 g sugar
  • 20 g fresh ginger
  • 4 egg yolks
  • lime
  • 2 egg whites
  • 70 g icing sugar
  • 70 g melted butter
  • 60 g flour
  • 10 g bitter cocoa

For the recipe of cat tongues and mango ice cream, heat the milk; just start
to boil, pour it over the egg yolks beaten with sugar. Cook stirring until
the cream does not begin to veil the spoon. Turn off, add the cream and let it cool. Blend 350 g of mango pulp; add the juice and the peel of half a lime. Grate the ginger, collect the pulp in a sheet of kitchen paper and squeeze it by pouring the juice into the mango shake. Mix it with the cream and pour into the ice cream maker:
the ice cream will be ready in 45-60 minutes.
Cat tongues: mix the egg whites with icing sugar, flour, cocoa and melted butter, obtaining a thick batter. Spread it over a plate covered with baking paper and spread it with a spatula, in thin layers, obtaining strips of 20 × 5-6 cm. Bake at 180 ° C for 5-6 minutes; baked and detached cat's tongues; as long as they are still warm and malleable, place them around smooth glasses or ring molds. Prepare a few at a time, based on the number of molds available to you. Let it cool: they will become crunchy. Serve the ice cream with cat tongues, the mango remained diced and, to taste, with mint or lemon balm leaves.
