Recipe Braised turkey with apple juice


  • 1 pcs overweight turkey
  • 300 g unsweetened apple juice
  • 8 pcs shallots
  • 2 pcs Annurca apples
  • rosemary
  • butter
  • extra virgin olive oil
  • salt

For the recipe of braised turkey with apple juice, brown the turkey in a fat-free hot casserole on the skin side for 2-3 minutes, then turn it and brown it for another minute. Sprinkle with apple juice, season with salt, season with a couple of rosemary sprigs and continue cooking in a covered casserole for 25 minutes; remove the lid and cook gently for 30 minutes, turning it from time to time.
For stairs and apples: Eliminate the ends of the shallots and cut them in half lengthwise, leaving the peel. Heat a pan with a little oil and a sprig of rosemary and cook the shallots for 3 minutes on the cutting side; turn them and continue cooking for another 3-4 minutes. Cut the apples into 8 slices and remove the cores. Brown them in a pan with a knob of butter for 1-2 minutes per side, until they begin to brown. Turn off, season with salt and serve with braised turkey and shallots.
