Recipe Birds escaped, the Lombard recipe


Our Sunday recipe are these meat skewers, which owe their name to the fact that hunted birds were originally roasted on skewers and, in lean times, birds were replaced with meat rolls and in that case they were ironically called "escaped"

  • 500 g 12 slices of pork loin
  • 100 g streak of bacon
  • 12 g slices of pancetta tesa
  • sage
  • butter
  • salt
  • pepper

Cut into chunks the slice of bacon.
Roll out a slice of bacon on the loin slices, complete them with a sage leaf each and close them in rolls.
Prepare 4 skewers with 3 rolls each, arranged alternately with the pieces of bacon.
bake in a frying pan in a foaming butter nut for about ten minutes, browning them on all sides; add salt and pepper.
