For the pear tortelli recipe, prepare the batter: in a small saucepan, bring to the boil 250 g of water together with the butter and a pinch of salt. Then add the flour, all at once, and mix the dough, keeping it on the fire until it detaches from the walls and the bottom of the saucepan, with a slight sizzle as if it were frying.
Then turn it off and transfer it to a bowl and let it cool. Then add the eggs, one at a time, not adding the next if the previous one has not been perfectly mixed. Peel the pears, remove the core and cut them into small pieces. Pass them in a little flour, shaking off the excess, then add them in the prepared batter. Heat plenty of oil in the frying pan.
Pour the batter, spoonfuls, together with the pieces of pear. Remove the tortelli, which will thus form, after 3-4 'that will have surfaced on the surface, then pass them to drain on a double sheet of kitchen paper. Arrange them on a suitable serving dish, sprinkle them with icing sugar and serve immediately, hot.
