Boil the water for the pasta, in the meantime chop the mozzarella and let it drain, then chop the anchovies and fry them with garlic, oil, parsley and chilli.
Drop the pasta and while it cooks put the egg yolks in a large bowl and beat them with a pinch of salt, then add a drizzle of oil and continue to work them.
Drain the pasta and add it immediately to the eggs, mixing quickly, then add the anchovy sauce (after removing the garlic) and the mozzarella and mix.
The anchovy and mozzarella pasta is ready, plate up and serve immediately.
