Pizza without yeast
You can make a pizza without extraordinary yeast, as good as the one made in a wood oven and with the mother yeast. The processing requires a little care, but the result is truly surprising. First prepare the homemade yeast substitute stirring 250 g of boiling water with 250 g of whole rye flour.
Separately, mix 420 ml of room temperature water with 700 g of flour 1 and then add the rye flour mixture.
Knead the dough very well e only at the end add 15 g of salt and then do the first fold. After ten minutes proceed with the second fold and after ten minutes still with the third. Then let it rise for 24 hours.
The leavening of the pizza without yeast
The leavening must be done inside a container covered with silver pitted paper. After the rising time, you can roll out the dough with your hands and work it with your fingertips. You will notice that it is very soft and rich in bubbles. Do not use a rolling pin to shape it.
How to make pizza without yeast
Bake the pizza at 220 ° in a fan oven for 20-25 minutes. If you want to season it, cook it first only with the tomato sauce for 10 minutes, then add the mozzarella and cook until the end of cooking.
How to replace yeast
If you don't have brewer's yeast, but you have a yeast for savory pies or for desserts (without vanilla) or the bicarbonate, use them. The leavening will be different from the one we indicated in the recipe because instant, the pizza will be less soft and perhaps even less digestible, but it will still be tasty. In this case the dough is prepared like that of a classic pizza. Mix 500 g of 00 flour, or half 00 and half manitoba, if you have it. Add the yeast, a sachet or a teaspoon of baking soda and mix well with about 300 ml of water and a spoonful of oil.
In the water, dissolve a pinch of honey or sugar, or even malt if you have it because they help the leavening.
Finally add the salt.
At this point, spread everything with your hands on a well-greased pan and work with your fingertips to enlarge the dough.
Instant yogurt pizza
This pizza actually has yeast, but it must not rise.
It is prepared by mixing 200 g of 00 flour with 200 g of whole white Greek yogurt and a sachet of yeast for savory pies (or a teaspoon of baking soda). You can also use self-raising flour. Once the dough is ready, roll it out, season it with oil and salt and if you want also with the passata as if it were a real pizza. Bake at 220 degrees for 15 minutes and then add the mozzarella, or simply continue cooking until golden brown.
