Octopus in stew recipe, the appetizing recipe

  • 1 octopus of 800 g
  • 1 onion
  • extra virgin olive oil
  • 400 g green beans
  • 16 cherry tomatoes
  • pepper
  • fresh dill

Boil 1 octopus of about 800 g in abundant water to a light boil for about 40 minutes and let it cool in its cooking broth. Thinly slice 1 onion and sauté it in a veil of extra virgin olive oil with a drop of water, so that it does not color too much. After 10 minutes, add 400 g of boiled green beans, open lengthwise, sprinkle with 4 ladles of the octopus cooking broth, filtered, and cook for 1 minute. Drain the octopus, cut it into small pieces and serve with the onion and green bean stew and 16 quartered cherry tomatoes. Season with pepper, fresh dill and, to taste, with a drizzle of oil.
