120 g flour, 200 ml fresh milk, 2 eggs, 20 g of sugar, 25 g of butter, 1 teaspoon of baking powder.

In a saucepan melt the butter and let it cool for a few minutes. Add the milk and butter to the egg yolks and mix well, to prevent lumps from forming. Separately, add the yeast to the flour and then sift the latter over the mixture of egg yolks, continuing to mix with the whisk to mix everything. Whip very firm snow the egg whites and then, with a wooden spoon, incorporate them to the yolks with movements from top to bottom, not to disassemble them. Put a large and non-stick pan on the stove, let it melt a knob of butter and start cooking your pancakes in the middle of the pan a ladle of dough. Let it spread out by itself, and when you see small bubbles on the surface, turn it over with a spatula and wait a few minutes for your pancake to come out on the other side.
