How to make watermelon granita

Watermelon juice, sugar and some patience: here is everything you need to prepare the watermelon version of the Sicilian dessert par excellence. As any self-respecting granita would be appropriate accompany it with the typical brioche with the "Tuppo": a sort of small brioche, decorated with a pasta cap. For the watermelon granita, unlike the coffee granita, the cream it's maybe almost excessive, given the sweetness and freshness of the "melon", as it is called the watermelon in Trinacria.

Cut asliced ​​watermelon, remove the skin and seeds and pass the pulp in a vegetable mill. Strain the liquid obtained and, for each liter, dissolve approximately 200 g of sugar in the juice. Add the sugar little by little: if the fruit is already very sweet, it may be enough 100-150 g, vice versa it may be necessary to increase the dose.
Now pour the sweetened watermelon juice into a low and wide container, possibly hermetic. Close it and place the watermelon granita in the freezer for an hour. After this time turn it with a fork. Repeat it same procedure three more times: the granita will therefore be ready to be served after a total of four hours.

Keep in mind that the cold softens the sweetness. This means that the watermelon granita will be less sweet than the watermelon juice sweetened before putting it in the freezer. If, therefore, you fear that you have added too much sugar to the juice, do not worry, the final result will probably be perfect.
Even if it's boring stir the granita hourly, this is what makes the difference and will get you the right consistency. The temptation to make ice cubes with watermelon juice and then chop them with a powerful blender is great, but you won't get a slush.
If you want to add one aromatic note, brew a handful of jasmine flowers in four tablespoons of water overnight. The next day add the water flavored with watermelon juice and proceed as per recipe.
