The quality of the potato

Potatoes boiled in a microwave oven

The duration of cooking, once the water has come to a boil, depends on the size of the potatoes (try to choose them evenly!), But it will certainly take at least 25/30 minutes. Stick them with a fork to see if they are ready. Having to prepare the puree, or the gnocchi, they must be very soft. Once the desired consistency is reached, drain the water and peel the potatoes while still hot under a jet of cold water.

Boil the potatoes and then roast them or sauté in a pan

Potatoes require rather long cooking, which is why it is often recommended to boil them before putting them in the oven or to sauté them in a pan. cut them directly in cubes as you will then cook them. Bring a pot of water to a boil, add salt and toss the chopped potatoes. It takes 5 minutes to soften without becoming too soft. Then continue in the oven already hot or in the pan, in oil or butter that sizzle, so as to create that crust delicious around the potato and instead keep the heart soft.
