Horchata, the most famous drink in Valencia – Italian Cuisine


It is not a milk and it is not an urate as we understand it in Italy. Here's what the Valencia horchata is

You are planning one vacation in Valencia? Know that you will not find only sangria to drink. The most famous drinks of the Spanish city are others: one is called Agua de Valencia, cocktails based on sparkling wine, orange juice, gin and vodka, the other is called instead horchata, a refreshing drink prepared with a tuber.

It's not really a tureen: that's what the horchata is

Despite the similarity, the Valencian horchata has nothing to do with ours barley water Italian. Let's take a step back: the word orzata comes from the Latin hordeata, that is made with barley. Over the centuries the process has remained the same, but the barley has been replaced with other vegetable ingredients. There are therefore different types of edging.

Where to drink horchata in Valencia? You can't miss the historic one Horchateria Santa Catalina, obligatory stop in the Barrio del Carmen district. How to prepare horchata: the recipe

Once the whole chufa has been recovered, preparing the horchata is very simple, even if there is to wait a little. The ingredients are:

Chufa 200 g
Water 1 l
Sugar 50 g

Clean and rinse thoroughly the tubercles, place them in a bowl, add cold water until they are completely covered and leave them to soak in the refrigerator from 12 to 24 hours. If necessary, change the water.

Drain them and rinse them until the water is gone clear. Chop them with a mixer together with 250 ml of cold water. Add the remaining amount of water, stir and let it rest in the refrigerator for about two hours.

only the mixture with a narrow mesh colander, crushing well, in order to let all the juice escape. Add the sugar and flavored to taste with a cinnamon stick or lemon peel. Cool in the fridge again and serve the drink cold or with ice. You can keep the horchata in the refrigerator for up to 2/3 days.
