Homemade Viennetta: classic or special?

The recipe of homemade Viennetta

How to proceed with the preparation of this famous one ice cream cake? You need:

Ingredients

250 ml of fresh cream
200 ml of condensed milk
200 g of dark chocolate
2 spoons of sugar
bitter cocoa

Method

First melt the chocolate in a water bath and then pour it on a large sheet of parchment paper brushing it so that it becomes a thin plate and let it cool.
Meanwhile, whip the cream very well with the condensed milk and sugar until you get a soft cream.
If you want you can flavor it with vanilla or with something alcoholic like a spoonful of rum, because alcohol helps keep the ice cream soft.
Cover a 20 cm plumcake mold with plastic wrap and pour a few spoonfuls of cream onto the base.
Leave to cool in the freezer for 10 minutes and then add a layer of chocolate which in the meantime will have become like a sheet to be cut delicately into several parts, possibly with the size of the shape of the mold.
Leave to cool again in the freezer and then add a layer of cream.
A few minutes in the freezer and more cream and so on until all the ingredients are used up.
Leave the ice cream cake in the freezer for about 5 hours and then turn it out and decorate it with the bitter cocoa.

Yoghurt variant

You can replace condensed milk with 130 g of Greek yogurt if you want a lighter cake. To color it a little, you can divide the cream into two parts by adding only one bitter cocoa.
Yogurt will give a slightly more acidic taste to ice cream, but it will make it anyway very soft especially if you opt for whole Greek yogurt.

Variant with mascarpone

If you don't like or find condensed milk and if you don't want a yogurt ice cream cake, use it 150 g of mascarpone to always be whipped with cream.
The mixture will turn out more dense and the most compact ice cream, but definitely very tasty!
Needless to say, in this case you can add a coffee liqueur or a coffee restricted to one part of the cream tiramisu variant or maybe make a layer of Pavesini biscuits soaked in coffee.
