First of all, prepare the crazy dough: add all the ingredients (flour, water, oil and a pinch of salt) and mix quickly until you get a homogeneous dough, wrap it with cling film and let it rest at room temperature for at least 1-2 hours.
In the meantime, prepare the filling: clean and wash the vegetables, transfer them (still dripping with water) into a saucepan, cover with a lid and let them dry, then drain, squeeze them gently, chop them coarsely and season with parmesan and a pinch of salt.
Take the dough and roll it out into a very thin sheet, then cover the sheet with the filling and roll it over the filling.
Roll it into a snail, put it in a mold so that it maintains its shape and bake for 25-30 minutes or until golden brown (depending on the thickness of the pastry) at 180 ° C, in a preheated convection oven.
