Duck Kebab Recipe - Italian Cuisine


  • 200 g chicory
  • 60 g sugar
  • 8 persimmons Chocolates

For the duck kebab recipe, boned the duck legs and lightly beat the meat.
Peel half a small onion, cut into slices and blend with a dash of white wine and a drizzle of oil, using an immersion blender. Cut the skin of the duck with grilled cuts and season the pulp with a little oil, a pinch of salt, 4 teaspoons of spices and the pureed onion. Bake at 160 ° C for 1 hour and 30 minutes. Cut the meat into thin slices.
For the side dish: Wash the persimmons and cut a little in half and a little in 4 peaks. Heat a greased pan with a layer of oil and toast the persimmons on the side of the cut for 2-3 minutes, then turn them over and continue cooking for 1-2 minutes. Dissolve in the pan where you cooked persimmons sugar with 60 g of vinegar; scented with a bay leaf and a sprig of rosemary and cook until you get a syrupy consistency. Finally add the persimmons and flavor for 5 minutes.
Serve the duck kebab with persimmons, accompanied with chicory, chopped coarsely and seasoned with oil, salt and vinegar. To taste, garnish with fresh mint leaves and complete with tortillas or tortillas.
