Put the sugar in a saucepan with the water, bring to a boil and cook for about 5 minutes, until the sugar has melted and a syrup will be obtained.
Remove the saucepan from the heat and let it cool. Then add the juice of half a lemon and the sparkling wine and stir.

Pour the mixture into a container with low sides, then place it in the freezer for two hours. Every 30 minutes, break with the tines of a fork, the ice crystals so that the sorbet remains soft and homogeneous.Serve your champagne sorbet in Martini glasses by decorating its surface with cranberries or lemon sips.
