Press the clementines, extract the juice and strain it with a strainer to remove any seeds.

In a large bowl put the flour with baking powder, sugar, cold butter cut into small pieces, the egg, the grated rind of a clementine and the juice of the clementines.
Work well until the dough is smooth and homogeneous. Then form a ball, wrap it with plastic wrap and let it rest in the fridge for an hour.


Meanwhile, cut the clementines into thin slices of about 2-3 millimeters.
After the time, resume the dough, make the balls as large as a walnut.
Take the balls you have formed, mash them lightly and place a slice of clementine on each one pressing lightly.

Place the biscuits on a baking sheet lined with baking paper.
Sprinkle the biscuits with icing sugar and bake in a preheated oven at 180 degrees for about 10/15 minutes. Once cooked, take them out and let them cool on a wire rack.

Then serve the cookies to the clementines.
