Berry Muffin Recipe

  • 200 g berries
  • 200 g flour 00
  • 100 g sugar
  • 80 g natural yogurt
  • 80 g milk
  • 60 g butter
  • 1 sachet of baking powder
  • 1 egg
  • lemon
  • vanilla bean
  • salt

Mixed the flour with the sugar, the baking powder, the seeds of 1/2 vanilla pod, the grated rind of 1 lemon and a pinch of salt.
Add milk and yogurt and begin to blend with electric whisk, then also mix the butter, soft like ointment, and the egg. Knead until the mixture becomes smooth, without working it too much, to prevent the muffins from being sticky.
Add 150 g of berries and incorporate them with a spatula.
Distribute the dough in multiple muffin molds; sprinkle with the remaining berries and bake at 175 ° C for about 20 minutes.
