Open the vanilla bean with a blade and pull the seeds away.

Pour the mixture into the saucepan and bring to the boil again, making it thicken while continuing to mix.

Then make up the cake: use the first sheet of puff pastry to line the bottom and edges of the mold lined with parchment paper.
Fill the shell thus created with the cream, then add the jam spreading it over the surface.
Finally, close with the remaining sheet, sealing the edges well.

Prick the surface, brush with the egg white and sprinkle with icing sugar.
Then cook for about 30 minutes in a preheated convection oven at 200 ° C.

The bedside cake is ready, let it cool, then serve it or sprinkle it with icing sugar.
