Ingredients

100 g oat flakes
135 g flour
125 g butter
115 g sugar
75 g coconut flour
2 tablespoons caramelized sugar syrup (golden syrup)
1/2 teaspoon baking soda
1 tbsp hot water
salt

Method

Preheat the oven at 160 ° C. In a bowl, jumbled up together with oat flakes, flour, sugar and coconut and a pinch of salt. In a small saucepan over low heat, melt butter together with caramelized sugar syrup. Jumbled up baking soda with water and add it to the butter and golden syrup mixture. Pour the liquid part in the bowl of dry ingredients and mix well. formed balls, about a spoonful of dough, and place them aligned and well spaced on a baking sheet lined with parchment paper. bake at 160 ° C, after two minutes, using a spatula, flattened gently each biscuit. keep cooking for another 8-10 minutes. Remove from the oven and let cool lightly on the hot tray before transferring the biscuits to a wire rack, so that they cool completely without breaking.
