The zucchini they are among the most versatile vegetables there are and in this season they are sweet and very tender and, if you're lucky, also with their flower attached. The recipes to bring them to the table are really many, they can be the dressing of a first course, a side dish or a single dish if combined with cheese or other vegetables: there is only the embarrassment of choice. One of the most delicious cooking remains the al oven: the courgettes become crunchy just like chips and they are so good that one leads to the other. Even for children! But you can also prepare it as a delicious side dish, with the addition of aromatic herbs or stringy cheeses, for a more substantial and complete dish.

Prepare the zucchini in the oven!

To cook baked zucchini all the qualities are good: white, green, long, round or trumpet. However, the size of the courgettes is essential. Better to choose those smaller and younger, because they have less seeds in the pulp and are sweeter: the more time passes the more this vegetable acquires a bitter taste. And then wash them before slicing them: already the courgette itself is made up of a lot of water, if you cut the ends before putting them under water, they will absorb even more. If you have not really fresh zucchini, cut them and leave them in a colander with a generous handful of coarse salt to lose water for 30 minutes: they will have a less bitter taste.

Form is also important! For each recipe, in fact, there is a precise cut of the courgette. If you plan to make chips, then you will have to slice them thin with a mandolin and then put in the oven on a lightly oiled plate at 180 ° for about 20 minutes. If instead you prefer them filled, then you will make some logs that you will then dig with a spoon. If you like them with mint and oregano then you would do well to reduce them in pieces of 8-10 cm which you will then cut long into thin sticks. Bake in a pan with a little oil for 35 minutes at 180 °. If, instead, you want to prepare a size of zucchini and cheese, you can slice them in washers not too thick, so that cooking is uniform. For all preparations, the secret is to add few seasonings and to use many aromatic herbs, such as mint, basil, oregano and marjoram, which enrich the flavor of the vegetables. If you then have too the flowersthen fill them with diced mozzarella and an anchovy fillet, dip them in a batter made only of flour and mineral water and then place them on a baking sheet lined with lightly oiled baking paper. Cook 15 minutes at 190 ° and then enjoy them one after the other.
