Jam


To prepare a good fig jam, both white and black ones are perfect. Take some one Kg, wash and dry them. If you want to pass them with the mixer to obtain a homogeneous pulp, peel them, otherwise cut them into small wedges. Squeeze the juice of one lemon that you will pour into a bowl with your fruits e 400 g of sugar (preferably cane). Stir, cover with a clean cloth and leave rest 12 hours. At this point pour the mixture into a saucepan, turn on the fire and leave cooking until the desired consistency is reached.

The mustard

To prepare the fig mustard, peel a kilo and cut them into small pieces. Bring a saucepan with 100 g of dry white wine, 500 g of sugar and a glass of water. After 2 'of boiling add the figs and continue cooking for 20 minutes, turn off and let it cool. Add 5 drops of mustard essential oil.

Dried figs

To dry the figs with the natural method, wash them, dry them and remove the skins. At this point let's cut them in half, don't divide them and leave them composed. We will lay them out on a tray lined with baking paper and we will expose them to the sun by turning them from time to time. To prevent insects from preceding us in the tasting, let's cover them with a light net.
We will repeat this operation every day, until the desired consistency is achieved. For the success of the work, it is It is necessary to collect them at home every night, but also on rainy or humid and cloudy days.
