Take 800 g of clean persimmon pulp, pass it to the mixer and then add it to 3 eggs, a pinch of salt and place the mixture in 4 buttered non-stick cups. Cook them in a bain-marie in the oven at 150 ° for 25-30 minutes. Meanwhile, put 250 g of chestnuts boil and peel in a pan with a knob of butter. Add two tablespoons of honey and fry for a few minutes. Combine one bay leaf and then place the caramelized chestnuts around the persimmon puddings. Serve immediately.

Cream with caramelized persimmon
