Risotto with spider crab and prosecco


1) Boil the spider crab for 20 minutes; open the carapace e transferred the contents in a bowl, setting aside a spoonful of coral. With a nutcracker, break the legs and extract the pulp, which you will keep separate from the contents of the carapace. Dilute the coral in 2 tablespoons of warm oil and salt.

2) Chop onion e fry it with 4 tablespoons of oil; add the rice, toast it a few minutes, blend with the wine and add the broth a little at a time. When the rice is 3/4 cooked, add the contents of the shell.

3) Jump the shrimp tails with 1 tablespoon of oil e chopped chives. Bring the rice after cooking, add the pulp extracted from the legs, the shrimp tails, the chives, seasoned with salt and pepper. Serve the risotto in the dishes "stained" with coral oil.

This warming, low-fat pumpkin soup recipe is perfect for Halloween – especially when it’s served with breadstick broomsticks!

To spice up your pumpkin soup, crumble in a pinch of dried chilli when you’re cooking the onion.

Ingredients

  • 2tbsp olive oil
  • 1 onion, chopped
  • 1 garlic clove, crushed
  • 700g (1lb 6oz) pumpkin flesh, roughly chopped (can use butternut squash instead)
  • 2 sweet potatoes, peeled and roughly chopped
  • 1.2 ltrs (2pts) water or vegetable stock
  • 200ml (7fl oz) soya light alternative to milk
  • 4tbsp soya alternative to cream

For the ‘broomsticks’

  • 4 part-baked breadsticks
  • 2tbsp olive oil

Method

  1. Heat the olive oil in a large pan, add the onion and garlic and cook for a few minutes to soften.
  2. Add the pumpkin and sweet potato and cook for a couple of mins, then add the water or stock. Season with salt and ground black pepper, cover and bring to the boil, then simmer for 25 mins until the pumpkin and sweet potato are really tender.
  3. Meanwhile, preheat the oven to 200°C/400°F/gas mark 6. Cut the bread in half lengthways, then make several cuts one third of the way up the length to look like broom bristles. Repeat with the other bread, put onto a large baking sheet and drizzle with olive oil. Bake for 5-8 mins until golden.
  4. Stir the soya light into the soup, whiz everything together in blender or processor in batches until smooth. Return to the pan and gently warm through. Pour into bowls and finish with a swirl of soya alternative to cream.

Ingredients

  • 100g (3 1/2oz) plain flour
  • Pinch of salt
  • 75g (2 1/2 oz) butter, cut into cubes
  • 3 medium eggs, whisked
  • 200ml (7 floz) water

Method

  1. Sift the flour and salt into a bowl. Melt the butter with the water, bring to the boil, then remove from the heat.
  2. Tip in all the flour and beat with a wooden spoon until the mixture forms a thick paste.
  3. Return pan to the heat and beat until a smooth, dry ball forms, which leaves the sides of the pan clean. Remove from heat and cool.
  4. Gradually beat in the eggs, using a hand-held electric mixer. The paste is now ready to use.
