Ginger-Molasses Cookies

I saw this recipe on Ina Garten’s site[1] and wanted to make them for my kids’ school lunches this week. I wasn’t sure if they would like the crystallized ginger so I had them try it first. My daughter said it was spicy. My son said it was weird and NOT in a good way. After hearing their opinions I decided to only add 2 tbsp of the crystallized ginger instead of  the 1 1/4 cups that the recipe called for. I am glad I did because my kids loved these cookies and have been happily gobbling them up.

Preheat the oven to 350 degrees. Line a baking tray with a silpat mat.

In a large bowl, combine the flour, baking soda, cinnamon, cloves, nutmeg, ginger, and salt until mixed thoroughly. In another bowl, beat the brown sugar, oil, and molasses on medium speed with a mixer until creamy. Turn the mixer to low speed, add the egg, and beat for 1 minute, making sure to scrape the side of the bowl. Add the flour mixture to the egg mixture until just combined. Add the crystallized ginger and mix.

Scoop the dough with a spoons. then with your hands, roll each cookie into a 1¾-inch ball then roll  each cookie in the bowl of granulated sugar and place them on the sheet pans.

Bake for 13 minutes. The cookies will be crackled on the top and soft inside. Let the cookies cool on the sheets for a minute or two, then transfer to wire racks to cool completely. Serve with a glass of milk to dip them into (if desired). Enjoy.

1/4 cup vegetable oil
1/3 cup molasses
1 jumbo egg
2 tbsp crystallized ginger, chopped
White sugar, for rolling the cookies in

Directions:

Ingredients

2 very ripe large bananas
2 cups whole-wheat flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/8 teaspoon salt
1/2 cup plus 1 tablespoon light brown sugar
1 1/4 cups low-fat buttermilk
1 large egg
1/3 cup light olive oil
7 ounces blueberries, rinsed

Instructions

Preheat the oven to 350 degrees.

Peel the bananas and mash in a bowl, using a fork.

Mix the flour, baking powder, baking soda, salt, and 1/2 cup brown sugar together in a large mixing bowl. Make a well in the center and add buttermilk, egg, olive oil and mashed bananas. Fold the ingredients together until just incorporated. Gently stir in blueberries.

Spoon the batter into 12 paper-lined muffin tins and sprinkle with 1 tablespoon brown sugar. Bake for 20 to 25 minutes until golden brown on top; a toothpick inserted into the center of the muffin should emerge clean. Cool in the pan for a couple of minutes, then transfer to a rack to cool completely.

Delicata is my new favorite squash – I can’t believe it took me so long to try it! This squash is light, flavorful, and easy to cook. I am looking forward to trying all sorts of recipes with it. I lightly brushed some butter in each half then sprinkled them with a bit of brown sugar before baking them in the oven. They turned out so delicious, moist, and flavorful. My son absolutely loved his and so did my husband and I. I will definitely make this recipe again.

Preheat the oven to 375 degrees. Add a 1/4 inch of water to a large baking pan.

Cut the squash in half lengthwise then clean out the seeds with a spoon. Rub the butter equally into each squash half. Season with a touch of sea salt and freshly cracked pepper then sprinkle each half equally with the brown sugar. Place into the prepared baking dish then cover with tin foil.

 

Place the pan into the oven and bake for 30 minutes, or until tender. Remove the tin foil then turn the oven to broil; cook,watching carefully, for a few minutes or until the sugar starts to caramelize. Remove from the oven and serve immediately. Enjoy.

Delicata Squash with Brown Sugar and Butter

2 Delicata squash, cut in half lengthwise then scoop out the seeds

Sea salt and freshly cracked pepper, to taste
1 tbsp brown sugar
