Thank you for posting this Cinco De Mayo recipe round up, Pam! As I scrolled through the recipes, I was reminded of how many of them I have tried and loved! My family loves Mexican/Southwest cuisine, and your blog is the first one I turn to when we are craving it. Have a great weekend!

Wow what a varied fantastic selection of Mexican food. If I was at a restaurant, I would have a terrible time figuring out what to have. But I have been craving fish tacos lately, so that would probably be the bingo in this line up.

Oh man what a great roundup! I am a HUGE fan of Mexican food. Those Pork Tenderloin and Caramelized Onion Enchiladas look phenomenal!
